Shortbread Cookie Recipe

1 1/2 cups butter, softened
1 cup sugar
1 tsp vanilla extract
3 1/2 cups all-purpose flour
Sugar for dusting

Preheat oven to 350
In a large bowl, beat butter and sugar at medium speed with an electric mixer until combined.
Add vanilla. Slowly add flour, beating at low speed until dough comes together. Place on a lightly floured surface, and shape into a flat disk. Wrap in plastic, and chill for 30 minutes.
On lightly floured surface, roll dough into a 1/2 inch thickness and cut with a 2 1/2 inch round flutted cutter. Place cookies on an ungreased baking sheet, and sprinkle with sugar.
Bake for 20-25 minutes or until edges begin to brown. Let cool on pan for 10 minutes. Remove from pan, and cool completely on a wire rack.
